WHAT is A PASTEURIZER?
Pasteurizers commonly used for decrease microbiological load in product in liquid food processing plants that we serve. So their products can be stored more time.
In practice, products will be heated to a temperature that any bacteria can't survive. Then the product saved this temperature for a short time to be sure all organisms die. Then the product cooled to saving temperature and send to the storage tanks.

In the picture above you can see a pasteurizer drawing. The pasteurizer has a balance tank, some pumps, plated heat exchanger, holding cell, and a hot water circuit. In used plated heat exchanger there are tree sections, product from balance tank goes into regeneration section and product is heated by pasteruized product, it means same time outgoing product is cooled by inlet product. This heat regeneration can save too much energy. So energy consumption on heating and cooling sections will decrease because of this regeneration. Product heated on regeneration section goes into heating section, and heated to the pasteurization temperature (for ex. 90 degrees celcius). Product can not be heated directly by the steam. Because steam has too much temperature inside and this can burn the product in the plated heat exchanger. So there is a hot water circuit, and water is heated by steam, then hot water heats the product. After the product heated to the pasteurization temperature, it should stay at same temperature for a certain time, so it goes into a long pipe named holding cell, and saves the temperature (ex. 30 second). After holding cell, product will be pasteurized, and now it has to be cooled to the storing temperature (less than 6 degrees celcius). First product goes into regeneration section and is cooled by inlet product. After regeneration section product goes into cooling section. In cooling section product is cooled by ice water, and its temperature goes to 4-6 degrees celcius. Now we can send our product to storage tanks. Our sending line and storage tanks must be sanitized before sending product them, else it can be contaminated after pasteurizing.
